A University of Hertfordshire Fresher has created a unique sweet and sour flavoured ice-cream that is planning to be sold through Tesco stores up and down the country.

To mark the start of flare, the University’s business idea’s challenge, thousands of new students at this year’s Freshers’ Fair were asked to come up with a unique ice-cream product that could be made available on the high street.

The competition captured the students’ imaginative and entrepreneurial spirit and the winning entry - sweet and sour flavoured ice-cream - was the brainchild of Carrie Drake; an undergraduate studying Model Design and Model Effects at the University of Hertfordshire.

Carrie said: “The competition was a chance to come up with something new and exciting and it made me think creatively. I am very excited that my idea may go into production because I didn’t think I would win.”

The University engaged the team at Mad Professor Ltd, a unique corporate entertainment company to run the competition and make up a sample of the sweet and sour ice-cream for tasting and testing. Runner-up flavours included the sushi sauce wasabi, sweet potato and Christmas pudding & custard.

Tonia Harvey from the University of Hertfordshire added: “We are proud of our enterprising students, not only is the sweet and sour ice-cream a great idea but it has a very unique taste too. We are sure that someone will take this innovative product to market with the popularity of oriental food flavours continuing to grow in the UK.”

The University of Hertfordshire has approached food giant Tesco with the aim of selling the sweet and sour ice-cream in their stores in near future.
