Wilfried Zaha pulled one back to give Palace hope before Joel Ward missed a gilt-edged chance to equalise deep into injury-time when he sent a free header wide from a corner.
The Hornets were not at their best but the excellent team spirit was again pivotal as they secured their best-ever start to a top-flight campaign.
